Over the weekend I was watching a Ted Talk about what fun is and why it’s important. I was trying to remember what used to feel fun to me— before the pandemic, before my severe burnout. And the most basic answer had three components: outside, drinks, and fried potatoes. So friends, that is the recipe for dinner tonight.
It’s potatoes I steamed yesterday, smashed and pan fried in plenty of olive oil, then topped with lentil chili, Greek yogurt, shredded cheese, lots of red onion pickled radishes and cilantro from the yard, maybe some icy cold shredded cabbage, and definitely hot sauce.
On the side, a mocktail. One thing you should know about me is that up until yesterday, I owned one single wine glass, six pint glasses and an army of old mason jars. Not a cocktail glass in sight. I went on a little adventure to Thundermoon Collective and came home with two extraordinarily cute vintage collins glasses adorned by big green and white horizontal stripes. I’ll fill them all the way up with ice, add an ounce or two of the wonderful non-alchoholic Pathfinder (which is a bit like…fernet?), a splash of ginger beer, some Lime Spindrift and a sprig of mint. Come on, that’s pretty fun.
Now, if only our patio table weren’t rotten!
