This morning I woke up feeling like I had a coconut for a head. No thoughts, no brains, just some delicious juice sloshing around in there. A good day to bake relatively plain pizza for dinner: sourdough E made over the weekend, leftover creamy red pepper sauce from last night, extra Pecorino, mozzarella, the last bit of smoked Gruyere.
On the side, a salad of course! Butterhead lettuce from the yard, red onion pickled radishes (the recipe is in this post), chopped dates, green onions and leftover crumbled seed crackers. I’ll also use the brine from the pickled red onions to make vinaigrette: 1 Tablespoon whisked with an equal amount olive oil, 1/4 teaspoon each kosher salt, Dijon mustard and honey.
