This time next week I’ll be on vacation. I don’t normally get to go on Summer vacation and it’s kind of a big deal! My parents are staying with the puppy, friends are scheduled to do garden chores, the fridge is nearly cleaned out— everything is done and ready except the actual days between now and departure.
All of a sudden, home life feels like so much work. The meals I want to eat seem very involved. I’m losing motivation by the minute. And yet, we still have to eat dinner.
I do have one good motivator left and that is FAT NOODLES. On Friday when I dropped off tomatoes at Mr. Aaron’s, he sent me home with a big box of fresh mafaldine. Wonderful, thick, wavy, long strands of pasta! Tonight I’ll coat it in strange flavor sauce, then top with crispy crumbled tofu, sesame seeds and yard eggplant I roasted until caramelized and creamy this morning. I think there may even be some green onions that survived last week’s heat wave ready to pick for garnish.
I had to fight the urge to bring some of that malfadine home on Sunday when we went in for bagels! We too are trying to achieve fridge zero befor vacation 🙃
