A Fibrous Welcome
Today I'm cooking for very special guests.
One thing about me is I refuse to let a single person who stays in this house suffer from travel constipation. You. will. be. fed. fiber. So much fiber! Oatmeal in your bread, tahini in your dessert, vegetables at breakfast, lunch and dinner. So goes it with my in-laws’ first-ever visit to our home.
Tonight, a real onslaught to kick off their trip: my Yiayia’s Γεμιστά made with peppers and tomatoes and parsley and mint and dill from our garden. Shaved cabbage, pickled red onions and Greek feta tossed in tangy Greek dressing. A peach and strawberry crisp spiked with lemon and topped with a sesame oat crumble, served alongside vanilla ice cream. On the side, nojito Spindrifts.
