A slow start today after an unexpectedly late night out with a friend, celebrating surprise good news. We ate fistfuls of buttered popcorn and Caesar salads and the kind of crab cakes that have so little filler you think, I should have married rich.
I stayed out past my bedtime and may have indulged in one rather large glass of real white wine, causing today feel like I’m moving through water.
Tonight something easy, light, plain yet zippy. Half a cucumber, sliced and marinated in lemon juice, lots of salt, and a pinch of sugar— ready to toss later with arugula from the yard, feta, herbs and homemade, olive oil-drenched croutons. I baked them on Sunday when I had the oven on for prep and realized the end piece of some really excellent spelt + millet sourdough E made had gone stale. Okay I hear it, I am describing panzanella. We’re having panzanella for dinner. On the side, balsamic glazed tofu. And water. With electrolytes.
