Might I Suggest?
Today I'm cooking with a surplus of vinaigrette.
If you’re in charge of a side for Thanksgiving and haven’t planned anything yet, might I suggest the salad we’re eating tonight?
Crunchy lettuce such as romaine hearts, butterhead, maybe even some kind of shredded cabbage tossed with a punchy vinaigrette, finely chopped parsley, lots of chives or young scallions, and crispy shallots from a bag. Don’t skip a sprinkle of flaky (bonus points for smoked) salt right before serving! I know it sounds painfully simple, but the flavors and textures are such a nice compliment to the richness of any big, heavy meal.
I’m still drowning in vinaigrette leftover from the writers retreat a couple weeks ago and the one in question tonight is my standard 1 part maple syrup, 2 parts olive oil, 2 parts ACV dressed up a bit with sesame oil and miso. I’ll serve this very plain, very good salad alongside another pumpkin mac ‘n’ cheese, the last of my fresh cranberry orange relish, and a lemon Spindrift.
