For an enormous variety of reasons, today is another…no thoughts just juice sloshing around in my head like a delicious coconut sitting on top of my shoulders…day. I can’t even figure out how to arrange or maybe hyphenate? the words in that sentence to make complete sense. I’m deeply grateful to my past self for not only prepping, but also utilizing the fridge door system to its greatest extent this week. And the fridge door says we’re having pizza and salad for dinner.
I’ll top E’s sourdough with eggplant garlic spread, mozzarella, Greek feta, and paper thin slices of lemon. On the side, shredded green cabbage tossed with roasted honeynut squash, pickled red onions, sumac, smoked Maldon salt, parsley, and lemon vinaigrette.
As you know, pizza night requires a fun drink and tonight I think I’ll make very strong mint tea with cuttings from the yard and a little honey, over ice.
