I woke up to a soft drizzle this morning. This time of year we usually get big, dramatic, often threatening storms and I’m glad to see my garden get watered in a more peaceful way for once. I can’t tell you how happy I am to work from home today— at my own pace, cozy, quiet. Even though it’s pretty warm out, the rain is making me crave soup.
We were both huge fans of the soup from last week, so tonight I’m reusing the structure of it to make something a little different. The best part was that the starch from beans and potatoes released into the cooking liquid and when I added a pat of butter, emulsified to make a luscious broth. On Sunday I cooked flageolet beans simply in water and about a cup of red sauce I found in the freezer; now all I have to do is throw in yellow potatoes, smoked paprika and citrus salt I made with the zest of yesterday’s lemon. I think I’ll add green beans as my veg and top it with dill from the yard and Greek feta. My last two pieces of frozen sweet potato sourdough turned into garlic bread on the side.
